Heavenly Banana Nut Bread!



Ingredients

2 cups All Purpose Flour
1 tsp Salt
2 1/2 tsp Baking Soda
1 cup (2 sticks) Butter room temperature
1 cup Sugar
1 cup Light Brown Sugar
4 Bananas
4 Eggs beaten
1 cup Pecans
1 1/2 tsp Vanilla
2 tsp Sour Cream
2 tsp Cinnamon
Baking Spray

Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 loaf pans with Bakers Joy (or your favorite baking spray) 

Sift the flour, salt and baking soda into a large bowl. In another bowl, mix together the room temperature butter and sugar until smooth. Stir in the bananas, eggs, cinnamon, vanilla, sour cream and pecans until well blended. Then slowly stir in dry ingredients and stir just until blended. Divide the batter evenly between the two loaf pans. 

Bake for 50 to 60 minutes, until a toothpick inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for 5 minutes, then put loaves onto a cooling rack, and cool completely. Wrap in aluminum foil this will help keep in the moisture. Refrigerate the loaves for a couple hours before serving.
