Grilled Marinated Pork Chops




Ingredients:

1 can of Crushed Pineapple

1/4 cup Soy Sauce
1/3 cup Brown Sugar
 3 lbs Pork Chops
Black Pepper 

Directions:


Mix ingredients to create marinade

Marinade pork chops 3-4 hours
Rise and drain pork chops
Season with pepper
Preheat grill
Grill pork chops cooking evenly on both side until cooked thoroughly

Oatmeal Coconut Cookies




Ingredients:
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
3 cups oats (old-fashioned or quick-cooking)
1 8 oz bag of Shredded Coconut
1 tsp Cinnamon
1 tbs Vanilla

Directions:

Preheat oven to 350 degrees.
Cream butter and sugars until light
Add eggs one at a time and beat until mixed well, scraping down sides as needed
Add cinnamon and vanilla and mix until incorporated 
Mix in flour, baking soda and salt. 
Add oats and coconut and mix in
Drop by big tablespoonful on a lined cookie sheet.
Bake for about 15 minutes or until golden brown.

Taco Roll

Ingredients:

3lbs of Ground Beef

1/2 tsp Salt
1/2 tsp Pepper
20 oz can of Enchilada Sauce (we like Rosarita)
2 loaves of White Bread Dough
3 cups of Mild Cheddar Cheese
4 oz can Diced Green Chile Peppers
6oz can Olives sliced (optional)
1 egg
Flour
Sour Cream
Lettuce (optional)
Tomato (optional
Salsa (optional)




Directions:

Take two loaves of bread dough and set in bowl, cover and let rise a couple of hours

Add ground beef, salt, and pepper to a skillet and cook thoroughly
Drain ground beef
Preheat oven to 350 degrees F
Put ground beef back in skillet, add enchilada sauce and stir. Then set aside for now
Flour parchment paper on hard surface
Roll dough until 1/4" thick
Spread meat, cheese, green chile peppers, olives on about 1/4 of the roll
Then Roll use beaten egg to close the creases
Finally use the egg to coat the whole top of the roll so it will brown nicely
Cook 35-40 minutes or until golden brown

Let stand 5-10 minutes then slice and top with sour cream, lettuce, tomato, salsa, or your favorite toppings

Lemon Pepper Panko Crusted Cod

Ingredients:

1 box of your favorite Lemon Pepper Panko Bread Crumbs

1/2 tsp Salt
1/2 tsp Pepper
1/2 cup of Flour
2 Eggs
3/4 tsp Lemon Juice
Vegetable Oil for frying
6 pieces of Cod thawed 


Directions:

Then rinse cod and drain for a few minutes
Mix salt and pepper in with flour in a medium size bowl
In a second bowl mix eggs and lemon juice
In a third bowl put lemon pepper panko bread crumbs
Then dredge the fish in the flour mixture on both sides 
Then dredge in egg mixture on both sides
Finally, dredge in panko bread crumbs and set aside
Repeat until all fish is breaded
Then heat oil on high heat
When oil is ready place fish in oil cook for about 3 minutes and flip cook another 3 minutes or until cooked thoroughly
Place on plate with paper towels for a minute then serve

Blueberry Pancakes


We all just love fruity Pancakes! The kids devour them in a couple of minutes and will ask for more of these fluffy cakes.

Ingredients:

2 cups Flour
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Kosher Salt
3 tbs Sugar
1/2 tsp Cinnamon
2 Eggs
6 tbs Butter melted
3/4 cup milk
3/4 cup blueberries
Blueberries (for garnish optional)
Reddy-wip (optional)
Butter

Directions:

Sift flour, baking powder, baking soda, kosher salt, sugar, and cinnamon
Add melted butter, milk, and eggs whisk together
Fold in blueberries
Melt butter in skillet drop 1/4 cup of batter cook until golden brown flip and brown the other side
Top with your favorite syrup or whipped cream and fruit

JimBob's Cajun Dish


This is a very popular dish in our house! I Everyone in the family will always ask when are you making "The Dish", everyone just loves it!


Ingredients:

5 cubed Boneless Pork Loin Chops
4 links sliced of Smoked Beef Sausage (we prefer Opa's)
1/2 cup minced Onion
2 cans of Cream of Onion soup
3 tbs Soy Sauce
1 large bunch of Cilantro finely chopped
Original Creole Seasoning (we prefer Tony Chachere's) season to taste
3 cups of Minute Rice
Vegetable Oil
Water


Directions:
Heat enough oil to fast fry the pork
Season Pork lightly Creole Seasoning, Brown the pork
Then, add in onions and sausage cover and cook about 5 minutes on med heat
While this is cooking in another bowl whisk together the cream of onion soup and 2 cans of water (use cream of onion soup can)
Then add soy sauce to mixture and whisk again
After that you will add the cream of onion soup mixture and cilantro to the meat mixture and cook between low and med heat for about 15-20 minutes or until cooked thoroughly
5-10 minutes before serving make the Minute Rice
Serve over rice

Mini Stuffed Strawberry Shortcakes



Our family goes crazy for this cream cheese filling stuffed strawberry shortcakes!  Perfect for summertime or anytime.


Ingredients:

1 pkg Cream Cheese
1 tbs Sugar
1 tbs Vanilla
1/4 cup Sweetened Condensed Milk
3/4 tub of Cool Whip
3/4 tsp of fresh squeezed lemon juice
1 box Angel Food Cake
2 cups Sliced Strawberries
Sugar
Reddi-wip (optional)
Directions:
First slice your strawberries and mix in a few tbs of sugar and let them sit
Follow box directions on Angel Food Cake in cupcake tins or papers
Cool completely
While cooling mix cream cheese, sugar, vanilla, sweetened condensed milk, lemon juice and cool whip
Put a hole about 1/8tsp in the middle of the cupcake
Fill with cream cheese mixture and top with strawberries
You can top with Reddi-Wip (this step is optional)

French Toast



Ingredients:

4 Eggs
3 tbs Milk
1 tsp Cinnamon
1/2 tsp Nutmeg
1 1/2 tsp Vanilla
Butter or Margarine

Directions:
  1. Add all ingredients to large bowl
  2. Beat with a fork
  3. Heat skillet
  4. Add butter or margarine to skillet
  5. Dip bread in egg batter on both sides then add to hot skillet
  6. Cook until golden brown flip and cook other side until golden brown
  7. Pull off heat
  8. Spread a little butter or margarine on the top and serve with powdered sugar or your favorite syrup

Carne Guisada


This recipe is delicious and one of my hubby's favorite dinners! It is also very easy to make!

Ingredients:

Beef stew meat 2-3 lbs
Flour - 2-3 tbsp
Cumino/Cumin 1/2 tsp
Garlic Powder  2 tsp
Onion Powder  1 tsp
Water 1 cup
Salt (Optional)  To taste
1 tsp tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo)
Cilantro chopped 1 sprinkle

Cooking Instructions:
  1. First you would brown the meat in vegetable oil  
  2. Next, mix in flour
  3. Then, add remaining ingredients and stir
  4. Simmer covered at least 2-3 hours. Add more water if needed. 
  5. Serve with warm tortillas

Marie's Pineapple Upside-Down Cake



Ingredients

1/2 cup Butter

2 2/3 cups of Brown Sugar
2 cans of Crushed Pineapple 
2 2/3 cups All Purpose Flour
Maraschino Cherries
2 cups of Sugar
2/3 cup Shortening
3 tsp Baking Powder
1 tsp Salt
1/2 cup milk
1 cup Pineapple Juice (from draining crushed pineapple)
2 Eggs

Directions:

Preheat oven to 350 degrees F.  Drain Pineapple
Once drained (save juice for later ) take pineapple stir in 1 cup of brown sugar (set aside for a while)
Melt butter and pour into 13X9" pan.  Sprinkle with remaining brown sugar evenly over butter
Spread Maraschino cherries if desired
Then spread pineapple mixture on top of the cherries
In bowl, beat flour, sugar, shortening, baking powder, s alt, milk, pineapple juice, and eggs.  Beat with electric mixer on low speed for about 30 seconds.  Scrape the bowl frequently.  Then beat on high for about 3 minutes, scraping the bowl a couple of times.  Pour batter over pineapple and cherries.
Bake 40-45 or until toothpick comes out clean
Cool cake then flip cake over on to serving tray,  May serve cold or warm
