Grilled Marinated Pork Chops




Ingredients:

1 can of Crushed Pineapple

1/4 cup Soy Sauce
1/3 cup Brown Sugar
 3 lbs Pork Chops
Black Pepper 

Directions:


Mix ingredients to create marinade

Marinade pork chops 3-4 hours
Rise and drain pork chops
Season with pepper
Preheat grill
Grill pork chops cooking evenly on both side until cooked thoroughly

Oatmeal Coconut Cookies




Ingredients:
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
3 cups oats (old-fashioned or quick-cooking)
1 8 oz bag of Shredded Coconut
1 tsp Cinnamon
1 tbs Vanilla

Directions:

Preheat oven to 350 degrees.
Cream butter and sugars until light
Add eggs one at a time and beat until mixed well, scraping down sides as needed
Add cinnamon and vanilla and mix until incorporated 
Mix in flour, baking soda and salt. 
Add oats and coconut and mix in
Drop by big tablespoonful on a lined cookie sheet.
Bake for about 15 minutes or until golden brown.

Taco Roll

Ingredients:

3lbs of Ground Beef

1/2 tsp Salt
1/2 tsp Pepper
20 oz can of Enchilada Sauce (we like Rosarita)
2 loaves of White Bread Dough
3 cups of Mild Cheddar Cheese
4 oz can Diced Green Chile Peppers
6oz can Olives sliced (optional)
1 egg
Flour
Sour Cream
Lettuce (optional)
Tomato (optional
Salsa (optional)




Directions:

Take two loaves of bread dough and set in bowl, cover and let rise a couple of hours

Add ground beef, salt, and pepper to a skillet and cook thoroughly
Drain ground beef
Preheat oven to 350 degrees F
Put ground beef back in skillet, add enchilada sauce and stir. Then set aside for now
Flour parchment paper on hard surface
Roll dough until 1/4" thick
Spread meat, cheese, green chile peppers, olives on about 1/4 of the roll
Then Roll use beaten egg to close the creases
Finally use the egg to coat the whole top of the roll so it will brown nicely
Cook 35-40 minutes or until golden brown

Let stand 5-10 minutes then slice and top with sour cream, lettuce, tomato, salsa, or your favorite toppings

Lemon Pepper Panko Crusted Cod

Ingredients:

1 box of your favorite Lemon Pepper Panko Bread Crumbs

1/2 tsp Salt
1/2 tsp Pepper
1/2 cup of Flour
2 Eggs
3/4 tsp Lemon Juice
Vegetable Oil for frying
6 pieces of Cod thawed 


Directions:

Then rinse cod and drain for a few minutes
Mix salt and pepper in with flour in a medium size bowl
In a second bowl mix eggs and lemon juice
In a third bowl put lemon pepper panko bread crumbs
Then dredge the fish in the flour mixture on both sides 
Then dredge in egg mixture on both sides
Finally, dredge in panko bread crumbs and set aside
Repeat until all fish is breaded
Then heat oil on high heat
When oil is ready place fish in oil cook for about 3 minutes and flip cook another 3 minutes or until cooked thoroughly
Place on plate with paper towels for a minute then serve

Blueberry Pancakes


We all just love fruity Pancakes! The kids devour them in a couple of minutes and will ask for more of these fluffy cakes.

Ingredients:

2 cups Flour
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Kosher Salt
3 tbs Sugar
1/2 tsp Cinnamon
2 Eggs
6 tbs Butter melted
3/4 cup milk
3/4 cup blueberries
Blueberries (for garnish optional)
Reddy-wip (optional)
Butter

Directions:

Sift flour, baking powder, baking soda, kosher salt, sugar, and cinnamon
Add melted butter, milk, and eggs whisk together
Fold in blueberries
Melt butter in skillet drop 1/4 cup of batter cook until golden brown flip and brown the other side
Top with your favorite syrup or whipped cream and fruit

JimBob's Cajun Dish


This is a very popular dish in our house! I Everyone in the family will always ask when are you making "The Dish", everyone just loves it!


Ingredients:

5 cubed Boneless Pork Loin Chops
4 links sliced of Smoked Beef Sausage (we prefer Opa's)
1/2 cup minced Onion
2 cans of Cream of Onion soup
3 tbs Soy Sauce
1 large bunch of Cilantro finely chopped
Original Creole Seasoning (we prefer Tony Chachere's) season to taste
3 cups of Minute Rice
Vegetable Oil
Water


Directions:
Heat enough oil to fast fry the pork
Season Pork lightly Creole Seasoning, Brown the pork
Then, add in onions and sausage cover and cook about 5 minutes on med heat
While this is cooking in another bowl whisk together the cream of onion soup and 2 cans of water (use cream of onion soup can)
Then add soy sauce to mixture and whisk again
After that you will add the cream of onion soup mixture and cilantro to the meat mixture and cook between low and med heat for about 15-20 minutes or until cooked thoroughly
5-10 minutes before serving make the Minute Rice
Serve over rice

Mini Stuffed Strawberry Shortcakes



Our family goes crazy for this cream cheese filling stuffed strawberry shortcakes!  Perfect for summertime or anytime.


Ingredients:

1 pkg Cream Cheese
1 tbs Sugar
1 tbs Vanilla
1/4 cup Sweetened Condensed Milk
3/4 tub of Cool Whip
3/4 tsp of fresh squeezed lemon juice
1 box Angel Food Cake
2 cups Sliced Strawberries
Sugar
Reddi-wip (optional)
Directions:
First slice your strawberries and mix in a few tbs of sugar and let them sit
Follow box directions on Angel Food Cake in cupcake tins or papers
Cool completely
While cooling mix cream cheese, sugar, vanilla, sweetened condensed milk, lemon juice and cool whip
Put a hole about 1/8tsp in the middle of the cupcake
Fill with cream cheese mixture and top with strawberries
You can top with Reddi-Wip (this step is optional)

French Toast



Ingredients:

4 Eggs
3 tbs Milk
1 tsp Cinnamon
1/2 tsp Nutmeg
1 1/2 tsp Vanilla
Butter or Margarine

Directions:
  1. Add all ingredients to large bowl
  2. Beat with a fork
  3. Heat skillet
  4. Add butter or margarine to skillet
  5. Dip bread in egg batter on both sides then add to hot skillet
  6. Cook until golden brown flip and cook other side until golden brown
  7. Pull off heat
  8. Spread a little butter or margarine on the top and serve with powdered sugar or your favorite syrup

Carne Guisada


This recipe is delicious and one of my hubby's favorite dinners! It is also very easy to make!

Ingredients:

Beef stew meat 2-3 lbs
Flour - 2-3 tbsp
Cumino/Cumin 1/2 tsp
Garlic Powder  2 tsp
Onion Powder  1 tsp
Water 1 cup
Salt (Optional)  To taste
1 tsp tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo)
Cilantro chopped 1 sprinkle

Cooking Instructions:
  1. First you would brown the meat in vegetable oil  
  2. Next, mix in flour
  3. Then, add remaining ingredients and stir
  4. Simmer covered at least 2-3 hours. Add more water if needed. 
  5. Serve with warm tortillas

Marie's Pineapple Upside-Down Cake



Ingredients

1/2 cup Butter

2 2/3 cups of Brown Sugar
2 cans of Crushed Pineapple 
2 2/3 cups All Purpose Flour
Maraschino Cherries
2 cups of Sugar
2/3 cup Shortening
3 tsp Baking Powder
1 tsp Salt
1/2 cup milk
1 cup Pineapple Juice (from draining crushed pineapple)
2 Eggs

Directions:

Preheat oven to 350 degrees F.  Drain Pineapple
Once drained (save juice for later ) take pineapple stir in 1 cup of brown sugar (set aside for a while)
Melt butter and pour into 13X9" pan.  Sprinkle with remaining brown sugar evenly over butter
Spread Maraschino cherries if desired
Then spread pineapple mixture on top of the cherries
In bowl, beat flour, sugar, shortening, baking powder, s alt, milk, pineapple juice, and eggs.  Beat with electric mixer on low speed for about 30 seconds.  Scrape the bowl frequently.  Then beat on high for about 3 minutes, scraping the bowl a couple of times.  Pour batter over pineapple and cherries.
Bake 40-45 or until toothpick comes out clean
Cool cake then flip cake over on to serving tray,  May serve cold or warm

Italian Style Meatloaf





Instructions
2 lbs of Ground Beef
2 tsp Seasoned Salt
1 tsp Garlic Powder
1 tsp Onion Powder
1 cup of Italian Style Breadcrumbs (I prefer Progresso)
6 large Eggs

Directions

Preheat oven to 350F
Hard boil 4 eggs in water and salt
Cool and peel eggs
Mix ground chuck, seasoned salt, garlic powder, onion powder, 2 eggs 
In baking sheet make a bottom layer of meat
Place hard boiled eggs on bottom layer
Use remaining meat to cover top of eggs 
Cook for about 1 hour or until cooked through
Finally, let set 5-10 minutes before cutting

Decadent Dark Fudge Cake Batter Cookies


Ingredients


1 pkg Dark Chocolate Fudge Cake Mix
1 tsp Cinnamon
2 large eggs
1/2 cup melted butter (1 stick)
1/4 cup dark brown sugar
1 tsp Vanilla Extract
1 cup semi-sweet chocolate chips
1/2 cup Pecans
1 cup maraschino cherries chopped

Directions
Preheat oven to 350 F
Mix cake mix, cinnamon, eggs, butter, dark brown sugar, and vanilla extract until well blended 
Stir in chocolate chips, pecans, and cherries
Drop by tablespoonfuls onto greased baking sheet
Bake for about 10-12 minutes
Let stand in pan for a couple minutes than move to wire cooling rack

Smoked Chicken

Ingredients


2 tbs Seasoned Salt

1 tsp Pepper
1 tsp Chili Pepper
2 tsp Paprika
1 tsp Onion Powder
1 stick of butter softened

Directions


Preheat smoker to 225F

Rub chicken with softened butter
Rub chicken with rub
Cook for about 4 hours or until chicken reaches temperature of 170F 
Thermometer should be placed through the thickest part of the breast
Let chicken rest 5-10 minutes before slicing

Yummy Homemade Pepperoni Pizza



Ingredients

3 cups Flour

1 tsp salt
Water
1 pkg yeast
Vegetable oil
Pizza Sauce (I prefer Contadina)
Mozzarella (I prefer the Kraft mozzarella with Philadelphia)
Pepperoni
Shredded Parmesan
Basil
Oregano

Directions

Preheat oven to 425 and oil a cookie sheet or two round pizza pans
Dissolve yeast in warm water. Follow instructions on package
Combine salt and flour
Add yeast 
Add water should be around 1 cup.  Add slowly and just enough to form a nice bowl of dough. 
Put into a lightly oil bowl with vegetable oil and cover with a tea towel.
Let it rise one it has spread dough in cookie sheet or 2 round pizza pans
Cover and let rise again
When it has risen add pizza sauce (add to your taste)
Sprinkle top of sauce with Basil and Oregano
Cover with mozzarella cheese
Then add pepperoni
Sprinkle top with Shredded Parmesan
Bake for about 20 minutes or until bottom crust is golden brown

Brown Sugar and Spice Rubbed Grilled Chicken!




Ingredients

4 Tbs Brown Sugar

2 Tbs Paprika
4 Tsp Onion Powder
1 1/2 tsp Seasoned Salt
1 1/2 tsp Salt
2 Tsp Chili Powder
2 Tsp Black Pepper
6 Boneless Skinless Chicken Breast

Directions

 Preheat grill
Mix brown sugar and seasoning in a resealable plastic bag
Place one chicken breast at a time and shake to coat
Spray both sides with cooking spray
Grill chicken turning often to avoid burning brown sugar
Grill until chicken reaches internal temperature of 170 degrees F

Savory Herb and Garlic Shrimp




Ingredients

1 stick of butter

1 lemon or lime sliced
1 packet of Good Season herb and garlic 
16 oz Fresh Shrimp cleaned and deveined

Directions

Preheat oven to 400 F
Melt a stick of butter
Place sliced lime layered on top of butter
Then place fresh shrimp on top
Then sprinkle one packet of  Good Season herb and garlic 
Bake for 12 minutes

Cake Batter Cookies




Ingredients

1 (18.25 oz.) box cake mix

1 tsp. baking powder
2 eggs
1/2 cup vegetable oil
1 cup semisweet chocolate chips
1/2 cup chopped Macadamia Nuts
1 tsp Vanilla

Directions

Preheat oven to 350 F spray bottom of cookie sheets with baking spray (Baker's Joy or your favorite)
In a medium bowl mix together the cake mix and baking powder
Add eggs and vegetable oil, mix well
Stir in chocolate chips and macadamia nuts
Drop by rounded teaspoonfuls onto cookie sheet
Bake for 9-10 minutes
Allow cookies to cool for about 5 minutes before transferring to cooling racks

Tasty Chicken Tacos



Ingredients

5-7 Servings

1 Whole Chicken
Water
2 tbsp Knorr's Chicken Bullion
Fajita Seasoning
1 pkg Corn Tortillas
Vegetable Oil
1 pkg Colby or Monterrey Jack Shredded Cheese
Lettuce 
Tomato
Sour Cream
Guacamole 

Directions
  1. Preheat oven to 350
  2. Put chicken in stock pot with water.  Use enough water to cover the chicken  
  3. Bring to a boil and add Knorr's 
  4. Cook until cooked thoroughly 
  5. Shred chicken.  Discarding fat, skin, and bones
  6. Heat about 1/2 cup of vegetable oil over medium heat
  7. Drop one drop of water to make sure it is hot enough to fry
  8. Carefully add tortilla folded in taco shape.  Use tongs to hold up the other half while you fry flip over and cook until golden.  Make sure you use tong to hold up the end not in the oil every time
  9. Set on paper towels to drain wipe off excess oil in tortilla with paper towel
  10. After completing tortillas add 2 tbsp of vegetable oil to skillet
  11. When heated add chicken and fajita seasoning (season to taste) and 2 tbsp of chicken stock 
  12. Stuff tortillas with chicken and cheese
  13. Place on baking sheet cook just long enough to melt the cheese
  14. Add lettuce, tomato, sour cream, guacamole

Strawberry JELL-O Cake




Ingredients

Yellow or White Cake Mix

Eggs
Vegetable Oil
Water
3 oz Strawberry Jello
Instant Vanilla Pudding
Milk

Directions


Make the cake in a 13x9 glass cake pan.  Follow the directions for the cake.

Cool the cake in the pan 
Bring 1 cup of water to boil  
Take off heat add the jello mix and stir until completely dissolved
Add 3-4 ice cubes and continue to stir until melted
Cool jello until about room temperature
Use the end of wooden spoon to make holes in the cake in an even pattern with space in between holes 
Pour the Jello over the cake evenly
Place in fridge to cool completely
Make the instant pudding following the directions
Spread the pudding over the top of cake and refrigerate for a minimum of a couple hours before serving

Marie's Easy Pasta Salad



Ingredients

3/4 cup whole Green Olives
1 6 oz can black olives 
1 box of your favorite trio Italiano pasta 
1/2 cup cubed Cheddar cheese or crumbled Feta cheese  
3/4 cup cubed Italian Dry Salami
3/4 to 1 cup of greek or Italian dressing
20 slices of Pepperoni 
Shredded Parmesan 

Directions
Cook Pasta according to directions
Then drain pasta and put in cold water 
After pasta is cooled drain pasta again
Then drain olives
Cube salami and cheese
Mix all ingredients 
Slowly add dressing while mixing careful not to drown the pasta.
Finally top with shredded Parmesan



Pepperoni Stuffed Chicken




Ingredients

6 Boneless Skinless chicken breast.

2 Eggs
1 cup Flour
1 box Panko Italian flavored bread crumbs
6 slices of provolone or Cheddar Cheese 
1 package of pepperoni or ham
Salt
Pepper
Vegetable Oil

Directions


Preheat oven to 350

Rinse and drain the chicken, then beat with mallet.
Place 6-7 slices of pepperoni and 1 slice of provolone on the chicken.  Then Fold the chicken over and we use a toothpick to hold together.
Set up 3 pie dishes or bowls in a row.  One with flour seasoned with salt and pepper, the next having two beaten eggs and the third with the panko bread crumbs. 
Dip the chicken in the seasoned flour, shaking off the excess flour,  then dip in the egg, and finally dip in the panko bread crumbs.
Heat oil then place chicken in oil and continue to fast fry until golden brown.  Once golden brown flip over so both sides are nice and golden brown.
Then place on a racked pan.  Cook for about 20 minutes or until cooked thoroughly.
You can eat as is or you can top with your favorite spaghetti sauce.

Heavenly Banana Nut Bread!



Ingredients

2 cups All Purpose Flour
1 tsp Salt
2 1/2 tsp Baking Soda
1 cup (2 sticks) Butter room temperature
1 cup Sugar
1 cup Light Brown Sugar
4 Bananas
4 Eggs beaten
1 cup Pecans
1 1/2 tsp Vanilla
2 tsp Sour Cream
2 tsp Cinnamon
Baking Spray

Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 loaf pans with Bakers Joy (or your favorite baking spray) 

Sift the flour, salt and baking soda into a large bowl. In another bowl, mix together the room temperature butter and sugar until smooth. Stir in the bananas, eggs, cinnamon, vanilla, sour cream and pecans until well blended. Then slowly stir in dry ingredients and stir just until blended. Divide the batter evenly between the two loaf pans. 

Bake for 50 to 60 minutes, until a toothpick inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for 5 minutes, then put loaves onto a cooling rack, and cool completely. Wrap in aluminum foil this will help keep in the moisture. Refrigerate the loaves for a couple hours before serving.

Rhondy's Quick And Easy Double Decker Tacos With Spanish Rice



For The Tacos

Makes about 7-8 tacos.


1.5lbs Ground Beef- Season your beef with your favorite seasoning or a taco packet seasoning, I always use a seasoning called Fajita Seasoning ( I love it on almost everything).

Shredded Cheese - Your preferred kind, We used Colby.
Taco Shells - Any kind , I used the Stand and Stuff ones.
Flour Tortillas- I used Sarita's
1 can of Refried Beans- I like Bush's Refried Beans
Lettuce - Chopped
Tomato- Diced
Sour Cream
For the Rice
Makes about 4-6 servings of rice.

Long Grain Rice - 1 cup or less, just spread it out enough to cover the pan

1 1/2 tablespoons tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo
2 cups of water
Any kind of oil - 2 tsp I used vegetable oil
Garlic Powder - 2 tsp or to taste
Onion Powder - 1 tsp to taste
Comino/Cumin Seasoning - Just a little Sprinkle

Preheat oven to 400 Degrees.


In a large skillet , you would brown the ground beef and season as you are browning it with your preferred seasoning.


While that is browning you would start the rice, you would put the Oil in the pan that is at a medium to high heat. Wait until the oil is warmed and put in your rice and you would stir the rice until it is a light golden brown. Then you would add most of your water, leave about a 1/2 cup remaining. Put in your seasonings for the rice and stir. Cook uncovered on medium heat until water is evaporated, stir the rice. Put the rest of the water and turn heat down to low to medium heat. After the water has evaporated again stir the rice and turn off the heat and put on a cool burner and put a lid to keep warm.


After the beef has finished browning you would leave the oils from the meat and put your can of refried beans in there and put salt to your taste and cook that until it is fully heated.

While the rice is still cooking and the beans are almost done, Heat up your flour tortillas by doing them one by on in a pan or you can put them in a pan and stick them in the oven for 4-5 minutes.

While those are in the oven you would put the beef and cheese in the taco shells, then take out the flour tortillas and then put the tacos in the oven until the cheese is melted. While you are waiting for the cheese to melt, spread the beans in the flour tortillas all around the flour tortilla. Then take out the tacos out of the oven and combine the flour tortilla by sticking the taco in the middle of the flour tortilla and pushing them together. Then you would fix your tacos with your preferred toppings. Then it is ready to serve, hope you enjoy!

Bacon Wrapped Chicken Kebobs


Ingredients Bacon Chicken Breast -3-4 Red Onion Zucchini Mushrooms Yellow Squash Garlic Salt Pepper Green Bell Pepper Red Bell Pepper Beef smoked sausage Directions In a large bag mix cubed chicken (make large cubes) and cubed vegetables with extra virgin olive oil, season salt, garlic powder and pepper. Season to your liking. Cut bacon in half Wrap the chicken in to half slices of bacon Preheat Grill to medium high heat or if using charcoal spread coals to achieve a medium high heat. Thread meat and vegetable on skewers (in middle), leaving a small space between each item. Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, continue grilling until meat is cooked all the way through and vegetables are tender.
