Rhondy's Quick And Easy Double Decker Tacos With Spanish Rice



For The Tacos

Makes about 7-8 tacos.


1.5lbs Ground Beef- Season your beef with your favorite seasoning or a taco packet seasoning, I always use a seasoning called Fajita Seasoning ( I love it on almost everything).

Shredded Cheese - Your preferred kind, We used Colby.
Taco Shells - Any kind , I used the Stand and Stuff ones.
Flour Tortillas- I used Sarita's
1 can of Refried Beans- I like Bush's Refried Beans
Lettuce - Chopped
Tomato- Diced
Sour Cream
For the Rice
Makes about 4-6 servings of rice.

Long Grain Rice - 1 cup or less, just spread it out enough to cover the pan

1 1/2 tablespoons tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo
2 cups of water
Any kind of oil - 2 tsp I used vegetable oil
Garlic Powder - 2 tsp or to taste
Onion Powder - 1 tsp to taste
Comino/Cumin Seasoning - Just a little Sprinkle

Preheat oven to 400 Degrees.


In a large skillet , you would brown the ground beef and season as you are browning it with your preferred seasoning.


While that is browning you would start the rice, you would put the Oil in the pan that is at a medium to high heat. Wait until the oil is warmed and put in your rice and you would stir the rice until it is a light golden brown. Then you would add most of your water, leave about a 1/2 cup remaining. Put in your seasonings for the rice and stir. Cook uncovered on medium heat until water is evaporated, stir the rice. Put the rest of the water and turn heat down to low to medium heat. After the water has evaporated again stir the rice and turn off the heat and put on a cool burner and put a lid to keep warm.


After the beef has finished browning you would leave the oils from the meat and put your can of refried beans in there and put salt to your taste and cook that until it is fully heated.

While the rice is still cooking and the beans are almost done, Heat up your flour tortillas by doing them one by on in a pan or you can put them in a pan and stick them in the oven for 4-5 minutes.

While those are in the oven you would put the beef and cheese in the taco shells, then take out the flour tortillas and then put the tacos in the oven until the cheese is melted. While you are waiting for the cheese to melt, spread the beans in the flour tortillas all around the flour tortilla. Then take out the tacos out of the oven and combine the flour tortilla by sticking the taco in the middle of the flour tortilla and pushing them together. Then you would fix your tacos with your preferred toppings. Then it is ready to serve, hope you enjoy!
